Cihuatán Distillery is a young distillery from the 2000s. Their passion is as interesting as the history of this Central American country facing the Pacific and strongly influenced by Mayan culture. The only distillery in El Salvador, It takes its name from the valley where it was established, topped by the Guazapa mountain. In Mayan legend, the Guazapa mountain refers to a goddess, because its contours draw and let you imagine the drawings of a woman. This is why the valley is called "Cihuatán", which means in Mayan "the land next to the sleeping woman". This goddess gave this valley all its wealth and abundance to the land. This wealth and abundance is found in the cultivation of local sugar cane. What makes this distillery unique is that it brings together in a single place all the essential stages of rum production, from raw materials to bottling. The distillery therefore has complete control, which allows it to produce quality artisanal rums, rich and complex. Its other differentiation is that it is a self-sufficient distillery because it uses bagasse to produce its electricity. Bagasse is a fibrous residue obtained after crushing sugar cane to extract its juice.
