The Taragawa Distillery is located in the far south of the Okinawa archipelago, on the island of Miyako. This heavenly setting, with its mild climate and rich mineral soil, makes it a prime location for sugarcane. Sugarcane, also known as "Uuji," appeared in the 19th century with the first settlers. All of its natural assets produce high-quality local sugarcane. In operation since 1948, the Taragawa Distillery was initially a microbrewery specializing in traditional Japanese alcohols. In 2018, the distillery carried out its first distillation of sugarcane reduced to molasses. Double distillation in a hybrid still, first in a vacuum atmosphere and then in a normal atmosphere, gives the rum a beautiful character. The semi-tropical climate favors the aging of the rum, but in return, the angel's share is significant, amounting to 14%. Japan has many treasures, and Taragawa rum is undoubtedly one of them.
