The Gospel is a whiskey distilled exclusively from unmalted Australian rye, harvested on a farm located in the Murray Mallee region of South Australia. The region's dry climate, the distillation expertise, and the minimum 2-year aging process give this whisky a smoothness, a richness, and a certain elegance. This translates into notes of buttery dark rye bread, vanilla caramel, woody spice, and dried red fruit. It's a nectar to be discovered with pleasure and indulgence.
Historically, it was the first Irish immigrants to North America who made whiskey from rye, as the North American climate is not ideal for growing barley. However, the dry Australian climate is not very suitable for growing barley either. Local distillers were therefore inspired by American Rye Whiskeys to make their whiskey. Ben Bowles and Andrew Fitzgerald are the two founders of The Gospel Distillery, in the surprising Brunswick neighborhood of Melbourne. Ben is originally from South Carolina, the region where he acquired his expertise as a distiller. He and his partner, both lovers of artisanal distillation, wanted to create a distillery in their image, large and modern while maintaining an artisanal approach to distillation. With the help of those around them, they built the distillery in 18 months. The distillery includes an impressively large 6-meter-high still, as well as a traditional copper pot still. So, The Gospell whisky is crafted with passion. Rye is a must because it's not easy to ferment, and its distillation yield is lower than that of barley. But it gives us a rich, spicy whisky.
