If you're looking for a slightly sweet white wine to pair with foie gras, Uby No. 4 is for you. Its notes of exotic fruit and its velvety, smooth palate make it ideal for aperitifs and spicy dishes. This wine offers notes of exotic fruit, passion fruit, pineapple, and mango.
The Uby estate is located in the north of the Gers department near Lake Uby in the commune of Cazaubon. The Morel family has been running the estate since 1920, and today it is François Morel, the third generation, who is instilling its philosophy. It aims to be sustainable, humane, and environmentally friendly. The wines produced by the estate are wines of pleasure, sharing, and conviviality, and are labeled IGP Côte de Gascogne or Vin de France.
Tradition and modernity are two of the hallmarks of the vineyard, right through to the winery. A new winery, guaranteeing safety and development, was built in 2012. It is designed to combine expertise and technical expertise, from vinification, aging, and conservation to packaging. UBY's continued quality is reflected in a constant commitment to optimizing traceability from the vine to the consumer.
Concerning the wines, the harvests are carried out at night at maturity with protection of the harvest. Then the different stages are carried out as follows: a skin maceration, an inert pneumatic pressing (protected from oxygen), a low-temperature fermentation, an aging on fine lees, a blending and conservation in a thermo-regulated vat.
For the Armagnacs, plots of Ugni Blanc were selected from tawny sandy soils. Distillation in a traditional still and aging in local oak barrels gives Uby Armagnacs both finesse and richness with a beautiful amber color. Elegance, suppleness, and fruitiness are all found in these wines.
The entire UBY vineyard has been certified as Controlled Sustainable Viticulture for 20 years and 20% of the vineyard hectares are organic.
Uby's emblem is the European pond turtle, as the last European pond turtles live and breed in a natural area around its pond. This protected species is in danger of extinction.
