What exactly is alcohol-free beer?

Alcohol-free beer is a low-alcohol beer, with thresholds defined by the regulations of each country. In France and within the European Union, a beer may be labelled "alcohol-free" when its alcohol content remains below 1.2%, while Belgium applies a much stricter threshold of 0.5%.

A 0.0% beer, meanwhile, contains no alcohol or virtually none, and most products available on the market contain less than 1% alcohol. The distinction between "alcohol-free" and "0.0%" therefore mainly depends on the alcohol content stated on the label, although flavour remains the main criterion when choosing a good beer.

How alcohol-free beer is brewed

Brewing alcohol-free beer generally follows the same stages as conventional beer, with an additional step dedicated to removing the alcohol:

1. Malting: barley is soaked in water to trigger germination. This process breaks down the grain's starch structure, allowing it to begin converting into sugars. The germinated grain is then dried in a kiln, with the drying temperature directly influencing the final flavour.
2. Milling: the malt is crushed into a coarse, grain-like texture, helping release sugars and starches when it comes into contact with water.
3. Mashing: the crushed grain is mixed with water to create the mash, which is gradually heated to around 75°C. Enzymes in the malt convert the remaining starches into sugars, which dissolve into the liquid. The mash is then filtered to produce the wort.
4. Boiling: the wort is boiled for one to two hours. Hops and other ingredients are added at this stage, shaping the colour, aroma and flavour of the finished beer.
5. Cooling: the wort is filtered again to remove solids left from the boiling stage, then rapidly cooled in preparation for fermentation.
6. Fermentation: the cooled wort is aerated and inoculated with selected yeast strains. The choice of yeast strongly influences the beer's style and aromatic profile. This stage lasts around ten days.
7. Maturation: the beer is transferred to a conditioning tank to refine its flavour. Insufficient maturation can lead to defects, such as acetaldehyde notes reminiscent of green apple.
8. Dealcoholisation: this is the stage specific to alcohol-free beer. It takes place shortly before finishing and removes all or part of the alcohol produced during fermentation.
9. Finishing: the beer is filtered one final time, carbonated and transferred to a storage tank before being bottled or kegged.

Alcohol removal methods

Alcohol can be removed using several techniques, each with a different impact on the beer's original aromas:

• Dilution with water: a simple and cost-effective method in which water is added until the desired alcohol level is reached. It lowers the alcohol content quickly but can also reduce flavour intensity.
• Heating: a traditional method in which the beer is heated to evaporate the alcohol. Because alcohol is more volatile than water, it evaporates first and the alcohol content falls as the temperature rises.
• Vacuum evaporation: a technique used by many modern breweries. The vacuum lowers alcohol's boiling point, allowing it to evaporate at around 40°C depending on the level of vacuum applied. This process preserves aromas and flavours much more effectively.
• Reverse osmosis: the beer is forced under pressure through a polymer membrane whose pores allow alcohol, water and certain volatile acids to pass through while retaining complex carbohydrates and most aromatic compounds. The alcohol is then separated by distillation before the aromatic concentrate is recombined with the remaining water and carbonated.
• Two-stage vacuum filtration: flavours and aromas are first captured under an initial vacuum, ethanol is then extracted under a stronger vacuum, and the components are subsequently recombined. This approach is designed to preserve the taste, aroma and colour of the original beer as closely as possible.

The new generation of alcohol-free beer owes much to the expertise of craft brewers. In France and elsewhere, a growing number of microbreweries are producing IPAs, pale ales, wheat beers and distinctly hop-forward beers without alcohol, often in carefully crafted small batches. This approach gives brewers more freedom to work on raw ingredients, aromatic profiles and mouthfeel, whereas industrial production often places greater emphasis on consistency than character.
