The rise of whisky in South Korea: from a soju country to a whisky producer

South Korea has not always been associated with whisky. For decades, soju, a rice-based spirit deeply rooted in Korean tradition, dominated local drinking culture, while whisky remained largely imported from Scotland, Japan or the United States. Yet over the past decade, the situation has changed dramatically. Whisky imports have risen sharply, fuelled by growing interest in single malts and premium bottlings.

The relationship with whisky has evolved significantly over the last ten years. A new generation of Korean consumers has turned to whisky out of curiosity and a desire to explore new flavours, following a similar dynamic to the growth of craft beer and cocktail culture in Seoul. Imports have surged, single malts and premium expressions have gained ground over more generic blends, and perceptions have shifted: whisky is increasingly approached as a category to explore through taste rather than simply as a social status symbol. Against this backdrop, a small number of Korean distilleries decided to move from consumption to production.

An identity shaped by local heritage and international expertise

Korean whisky does not seek to copy Scotch or reproduce the Japanese model. Its identity is developing at the intersection of long-standing local traditions and contemporary distillation techniques. Korean producers draw on a rich culinary heritage, including extended fermentation, local grains and traditional vessels, while applying internationally established methods for maturation in oak casks.

This combination produces whiskies with a distinctive character. Rice, one of the defining grains of Korean food culture, sometimes replaces barley as the main raw material, bringing its own sense of softness and roundness. Where Scotch may build its identity around peat or malt, some Korean whiskies express their individuality through a particularly strong connection to local agriculture and Korean traditions.

The distilleries shaping the history of Korean whisky

Two producers stand out as key names in the development of South Korea's emerging whisky scene.

Hwayo

Founded in the early 2000s in Yeoju Province, Hwayo is often cited as the first distillery in South Korea to develop a dedicated whisky production. Its journey reflects the broader evolution of Korean spirits: after establishing itself with premium soju, the producer gradually applied its expertise to whisky, creating a 100% rice single grain whisky based on a cereal deeply rooted in Korean culture.

Its flagship expression, Hwayo X Premium, embodies this approach. Matured in American oak casks before spending several additional months in large traditional earthenware vessels known as ongi, the whisky develops a refined, smooth profile with notes interpreted as rice, vanilla and delicate fruit. International recognition followed, with a gold medal at the 2023 World Whiskies Awards, marking another milestone for South Korean whisky.

Three Societies / Ki One

Three Societies Distillery reached another major milestone by producing the first Korean single malt whisky. Founded in 2020, the young distillery released Ki One Tiger Edition in February 2023, establishing an important landmark for the country's developing whisky industry.

Made from 100% malted Korean barley, Ki One stands out for its particularly long fermentation, designed to encourage greater aromatic complexity. It is then matured in new American oak casks. The result is a distinctive profile combining floral and fruity aromas, with notes interpreted as banana, apricot and peach, followed by a structured, spicy finish.
