Rhum Agricole: A Distiller's Philosophy

Unlike traditional molasses rum, Rhum Agricole is deeply rooted in its terroir. It is produced exclusively during the sugar cane harvest season by extracting fresh cane juice (known as vesou). This delicate process requires immediate distillation to capture the subtle floral, fruity, and vegetal notes of the freshly harvested cane.

Curing, aging, and blending allow master distillers to create exceptional French spirits ranging from vibrant white rums (rhum blanc) to complex aged rums (rhum vieux and VSOP/XO).

The main agricole rum producing regions

Although agricole rum is produced on several Caribbean islands and beyond, Martinique has made it its absolute signature.

● Martinique: the only region in the world with an AOC for its agricole rum. Strict rules govern sugarcane varieties, yields, distillation methods and ageing conditions. Its agricole rums are considered global benchmarks for the category.

● Guadeloupe: although it does not have an AOC, Guadeloupe has a renowned distilling tradition. Its distilleries produce agricole rums that are often wilder and more expressive than their Martinican counterparts.

● Marie-Galante: a distinctive island belonging to Guadeloupe, home to three distilleries whose agricole rums are regularly bottled at higher strengths, offering a pronounced character highly appreciated by enthusiasts.

● Haiti, Belize, Brazil: several distilleries outside the French overseas territories also produce rum from fresh sugarcane juice, with distinctive profiles influenced by local production methods.

Key stages of agricole rum production

1. Sugar cane harvesting: Sugar cane is harvested at peak maturity to guarantee maximum sugar content and aromatic richness.
   
   
2. Crushing & extraction: The cane is crushed within hours of harvesting to extract pure, fresh sugar cane juice.
   
   
3. Fermentation: Natural or selected yeasts convert the sugars in the vesou into alcohol over a 24 to 48-hour period, producing a low-alcohol cane wine.
   
   
4. Column distillation: Distillation takes place in traditional copper or steel single-columns (Créole columns), preserving the authentic aromatic profile of the cane.
   
   
5. Aging & maturation: White Rum (Rhum Blanc): Rested in stainless steel vats for a few months and gradually reduced with spring water.
   
   
6. Aged Rum (Rhum Vieux): Aged in oak casks (Bourbon or Cognac barrels) for a minimum of 3 years to develop rich notes of vanilla, wood, and spice.

Indication Géographique Protégée (IGP): Applies to Guadeloupe, French Guiana, and Réunion Island, ensuring origin and traditional craft standards.
