Traditionally crafted Japanese whisky, commonly known as Ji-Whisky. Distilled twice in a pot still, then aged for three years in both fine Oloroso sherry casks and bourbon casks. This Japanese art produces a delicate, rounded, smooth, and elegant whisky. It features delicate flavors of sherry, malt, wood, and vanilla.
The Eigashima Distillery, formerly White Oak, was built in 1984 based on Scottish designs. Historically, however, Eigashima has been producing traditional Japanese spirits like sake and shochu since 1888. The distillery is located in the small town of Akashi, near the Seto Inland Sea in southwest Japan. Did you know that it was the very first distillery in Japan to obtain the first license to distill whisky?
The production equipment may be copied from the Scots, but all the distillation and aging operations are the result of manual labor. This allows for the production of refined whiskies in small quantities. The other particularity lies in the climate, typically Japanese with large temperature variations, which greatly influences the aging process.
The uniqueness of the Akashi brand is to offer aging and finishing in different types of rare barrels.
